Oven Roasted Garlic Potatoes

Ingredients

  • 3 large russet potatoes cut into 1” cubes
  • 4 finely minced cloves of garlic
  • 3 tablespoons of Glover Street Market's Coratina Chili 24' Olive Oil
  • 2 tablespoons chopped fresh oregano
  • 1 tablespoon red wine vinegar
  • Sea salt and pepper to taste

Instructions

  1. Preheat the oven to 450°.
  2. Be sure to rinse and scrub your potatoes before cutting them into 1” cubes.
  3. Add the potatoes to a large bowl along with the garlic, olive oil, salt, and pepper, and mix until thoroughly coated.
  4. Spread out on a sheet tray lined with parchment paper and be sure not to crowd so that they can roast up and brown on all sides.
  5. Cook in the oven at 450° for 20 to 25 minutes or until browned and tender.
  6. Toss with oregano and vinegar and serve.
